Chocolate Guinness Cupcakes

These Chocolate Guinness Cupcakes are delicious, rich and moist. Probably my favourite type of chocolate cake EVER! They are perfect for St Patrick’s Day celebrations and are super cute in their little wrappers 🙂

Chocolate Guinness Cupcakes

Chocolate Guinness Cupcake Recipe

Ingredients

  • 100 g Self Raising Flour
  • 50 g Cocoa Powder
  • 200 g Caster Sugar
  • 115 g Butter Stork
  • 1 x Egg
  • 115 ml Guinness / Stout
  • 75 g / 75ml Buttermilk
  • 200 g Softened Unsalted Butter
  • 400 g Icing Sugar
  • 4 tsp Milk

Instructions

  • Pre-heat the oven to 325° F / 160° C / 140° Fan / Gas 3
  • Line a muffin tray with 12 large black muffin cases
  • Place the flour, cocoa & sugar in a large bowl and mix together
  • In a separate bowl melt the butter (1min in the microwave should be fine)
  • Add the egg and mix thoroughly
  • Next add the Guinness and mix again
  • Then add the buttermilk and mix. It will look like a curdled mess at this point, but that's fine!
  • Make a well in the dry ingredients and add some of the liquid
  • Mix it in with a spatula or wooden spoon
  • Add some more and again mix it in
  • Then finally add the rest of the liquid and mix to a smooth batter
  • Carefully spoon the mixture into the cases
  • Bake for around 30mins or until a cocktail stick comes out clean
  • Transfer to a wire rack to cool
  • For the frosting, mix the softened butter and vanilla in a large bowl
  • Add the sifted icing sugar and start to mix
  • Then add the milk and continue to mix until you have a smooth frosting
