Chocolate Guinness Cupcakes

These Chocolate Guinness Cupcakes are delicious, rich and moist. Probably my favourite type of chocolate cake EVER! They are perfect for St Patrick’s Day celebrations and are super cute in their little wrappers 🙂

Chocolate Guinness Cupcake Recipe

Ingredients
  1. 100g Self Raising Flour
  2. 50g Cocoa Powder
  3. 200g Caster Sugar
  4. 115g Butter (Stork)
  5. 1x Egg
  6. 115ml Guinness / Stout
  7. 75g / 75ml Buttermilk
  8. 200g Softened Unsalted Butter
  9. 400g Icing Sugar
  10. 4tsp Milk
Instructions
  1. Pre-heat the oven to 325° F / 160° C / 140° Fan / Gas 3
  2. Line a muffin tray with 12 large black muffin cases
  3. Place the flour, cocoa & sugar in a large bowl and mix together
  4. In a separate bowl melt the butter (1min in the microwave should be fine)
  5. Add the egg and mix thoroughly
  6. Next add the Guinness and mix again
  7. Then add the buttermilk and mix. It will look like a curdled mess at this point, but that's fine!
  8. Make a well in the dry ingredients and add some of the liquid
  9. Mix it in with a spatula or wooden spoon
  10. Add some more and again mix it in
  11. Then finally add the rest of the liquid and mix to a smooth batter
  12. Carefully spoon the mixture into the cases
  13. Bake for around 30mins or until a cocktail stick comes out clean
  14. Transfer to a wire rack to cool
  15. For the frosting, mix the softened butter and vanilla in a large bowl
  16. Add the sifted icing sugar and start to mix
  17. Then add the milk and continue to mix until you have a smooth frosting
