Coffee and Walnut Cake

Coffee and Walnut Cake is my husband’s favourite cake, so I had no choice but to come up with a tasty recipe for one, even though personally, I’m not a fan! I think coffee flavoured foods are a bit like Marmite and one of those things that people either love or hate! So if you’re one of those people like Mr. Sibley who love nothing more than a big old slice of coffee flavoured goodness, here is my Coffee and Walnut Cake recipe!

Ingredients
  1. For the Cake
  2. 350g Soft Butter (Stork)
  3. 350g Caster Sugar
  4. 2xtsp Instant Espresso Coffee Powder
  5. 6x Medium Eggs
  6. 350g Self-Raising Flour
  7. 225g Walnut Pieces
  8. For the Buttercream
  9. 250g Unsalted Butter
  10. 500g Fondant Icing Sugar
  11. 2xtsp Instant Espresso Coffee Powder
  12. To Decorate
  13. 8-10 Walnut Halves
Instructions
  1. Preheat the oven to 325° F / 160° C / 140° Fan / Gas 3.
  2. Grease & line two 7.5" tins.
  3. Cream together the butter and sugar until pale and creamy.
  4. Slowly add the beaten eggs.
  5. Mix the coffee powder with a splash of boiling water and then add it to the batter and mix well.
  6. Add the flour and mix thoroughly until smooth.
  7. Then finally add the finely chopped walnut pieces
  8. Carefully divide the batter into the tins (weighing each filled tin will help you to get them as even as possible).
  9. Bake for around 40 minutes or until a skewer comes out clean.
  10. Remove from the tins and leave to cool on wire racks.
  11. Whilst it cools make the buttercream filling. Add a splash of boiling water to the coffee powder and then place in a large bowl or mixer with the softened butter and icing sugar and cream together until creamy and fluffy.
  12. When the cakes are completely cool, sandwich them together with half of the buttercream and then spread the rest of the buttercream on top of the cake and decorate with the walnut halves.
