Simple Marzipan recipe ideal for fruit cakes.

Ingredients
  1. 125g Caster Sugar
  2. 125g Icing Sugar
  3. 250g Ground Almonds
  4. 1x Egg
  5. 1tsp Almond Extract
Instructions
  1. Place the ground almonds, icing sugar and caster sugar in a bowl and mix together.
  2. Add the beaten egg and almond essence and mix well, at first with a spoon and then with your hands until it has combined into a smooth dough.
  3. Turn it out onto a surface dusted with icing sugar and knead until smooth.
Notes
  1. If you are not using the marzipan immediately, wrap it in cling film and store it in the fridge.
